A unique culinary interpretation by Mathias Dandine
For this occasion, Michelin-starred chef Mathias Dandine, owner of La Bastide Bourrelly, has created a poetic and seasonal menu, designed as “a walk through Cézanne’s Provence.”
This exclusive menu, available from June 28 to October 12, 2025, draws on the artist’s culinary memories, inspired by the dishes once prepared by Madame Berne, hostess of the inn Cézanne loved in Le Tholonet.
Featured dishes include:
Duck with olives, slow-cooked the traditional way
Provençal beef stew (daube), a tribute to family gatherings
Salt cod brandade with Aïgo Boulido, a nod to humble southern roots
Apple dessert, a wink to Cézanne’s iconic still lifes
And the famous Estaque fritters, a sweet memory of his youth
Each course becomes a culinary creation that connects the Provence of yesterday with that of today — through tradition, elegance and emotion.
